Fresh Egg Noodles from Pauli Poultry Farm - with 33% Egg Content for the Ultimate Taste
In our homemade pasta varieties, we use at least 33% fresh eggs from our chickens. The high proportion of fresh egg in the dough makes for the fine taste. Our chickens live in species-appropriate conditions with generous outdoor access in good weather and feed without genetic engineering. Their well-being is important to us. This results in delicious eggs with a rich yellow for our noodles.

The Best Grains for Top Noodle Quality
For our noodle production, we primarily use durum wheat semolina. The high gluten protein content of this wheat ensures an elastic dough and gives the noodles firmness and perfect cooking properties.
For connoisseurs, we also offer varieties made from spelt and whole-grain spelt semolina. These impress with many nutrients and trace elements and a unique taste. Try the variety of our pasta from durum wheat and spelt.
How do noodles get their color?
Our pasta gets its golden-yellow color in the 'Pure' variant from the natural colorants of durum wheat and the high egg content. Spelt noodles have a lighter color with the same high egg content. Colorful noodles in red, orange, and green provide variety on the plate. These noodles get their appealing color from the addition of paprika, tomato, spinach, or herb powder. Especially the latter brings joy not only to the eye but also to the palate. Anyone who likes it spicy will love our chili noodles.
